It started with these dried vegetable chips that I got at Simply The Best! at the Pike Place Market over the weekend. My mom and uncle munched all of theirs away, then decided that I could make a great soup with them.
Experimentally, I tossed a few chips into an organic vegetable stock, but they just got soggy and more than a little slimy. The taste wasn't bad, though. So... I ended up making a soup of red lentils, organic vegetable stock, tossed in a parmesan rind, and just about everything I could find in the vegetable shelf, including half of that chayote.
As usual in my recipes, we start with sauteed garlic, onion, scallion, etc. I don't believe in un-sauted garlic and onions. Recipe to be posted this afternoon.
