Saturday afternoon, we got the urge to build a mountain of pasta, tomatoes, and more cheese than any family should pack away in a year.
Garlic, diced tomatoes, spices, four boxes of rotini, two pints of part-skim ricotta, 8 cups of mozzarella, 2 cups of parmesan... Layer after layer after layer... You cannot imagine how heavy this was in my big roasting pan. Even the next day, it hurt my back to take it out of the fridge!
So, if anyone out there is in the market for several large portions of carbs and fat, send me your address.
