Coming Soon: Spice World
I get a lot of questions (online and in person) about how I spice food, so I'm working on a spice encyclopaedia this weekend (between bath time with the husband and naps). I'm including sources, common uses, MY favorite uses, possible substitutions, and any interesting historical trivia that I have.
And, yes, I'm having to look some of this up. It's fun for me to compile and learn more about my own cooking. For instance, basil is native to Latin America, and was brought to Europe for the first time by Christopher Colombus. Today, there are two dozen varieties of basil, grown all over the world, and is considered the "Black-Thumbed Gardener's" best chance at avoiding herb-icide.
